A Case of Cabernets from

Domaine Saint Hilaire

Some of you will remember the lovely Cabernet Sauvignon 1991 that we shipped from Saint Hilaire many years ago.  At that time Robert Hardy was the owner and a dynamic force for wine making in the region.  In recent years the wines failed to reach the pinnacle of his achievements in the 1990s and we stopped buying.  However, the vineyard has now changed hands and things have taken a dramatic turn for the better!  Jonathan James, an English lawyer, has relocated to this beautiful property on the edge of the Basin de Thau, and with very little experience but a lot of enthusiasm he has thrown himself into realising the fantastic potential of the vineyard.

We have revisited several times since he took over, but in September we were bowled over by the quality of his new Cabernet Sauvignons.  And apparently we were not alone in our admiration; the prestigious Guide Hachette has just awarded him the top accolade of a Coup de Coeur for his stunning Advocate 2001!

All these wines are food wines and will go magnificently with any turkey, game or red meats over Christmas.  We have mixed a case of four bottles of each wine, for you to enjoy…….

    Vin de Pays d’Oc

    This is a lovely deep colour with minty cassis aromas, leading into a concentrated, ripe, blackcurranty wine with lovely balance, elegance and good length. 

 

    Domaine Saint Hilaire Cabernet Sauvignon Réserve 2001      5.45

    Vin de Pays d’Oc 

    The 2001 vintage was superb in the Languedoc and these next two wines clearly demonstrate why.  Selected from the best cuve, this is then gently oak-aged.  It is much deeper with an enticing cedary, cigarbox nose, which leads into a ripe, soft mouthful of cassis fruit with hints of spice and fruitcake, finishing with ripe tannins and great length. Cru Classé claret style at a fraction of the price!

 

     Domaine Saint Hilaire Cabernet/Merlot Advocate 2001        5.75               

     Vin de Pays d’Oc

    This is the award-winner, and it is a judicious blend of Cabernet and Merlot, which is also oak-aged.  There are black fruits with hint of expensive oak on the nose, and on the palate it is much softer with added summer fruit flavours, less tannin but lovely acidity.  All too easy to drink, it is easy to see why it won Guide Hachette’s Coup de Coeur!
